Citation: While taking a tour of the establishment the following was noted. Starting with the break room, there is dirt and dust on the refrigerator and storage cabinet. The floor has dirt, dust, trash and food particles on it, in general it needs a good cleaning. The room outside the chill cooler where the plants phone and knife sharping equipment is located, there is a table that consist of two tiers.The bottom tier has dirt, dust and dead flies on it.The walls and ceiling needs to be cleaned. As stated in the plants ssop [redacted]. [redacted] this is not the case not seeing this happening. The kill floor walls approximately 4 FT from the top has blood, fat and fecal material splattered on it that is visible in varices area's. The ceiling and cooling vents are dirty. The old counter balance that was attached to the old splitting saw is still hanging from the ceiling, this consisted of two pulleys a cable and a concrete block sitting on the floor that was the weight for the old saw. At the final wash area next to the door for the chill cooler, a piece of corner molding is coming lose from the wall creating a space for fat or meat particles to become lodged behind it. the room next to the knocking area where the stun gun and latic acid sprayer are stored has dirt, spent shell casing on the floor and cobwebs in the corners and next to the ceiling. the knocking pen area has cobwebs in the corners next to the ceiling. the doors separating the inedible room from the kill floor and the rest, of the plant this is a double swinging door is missing one side allowing odors to enter the rest of the plant. The maintenance/ hide room has dirt, dust and blood in the corners and back of the door. The table in there is a mess tools, rust and dirt scattered on it. The rails in the chill cooler,kill floor and boning room are starting to show a lot of rust. The roller parts of the shackles the plant is using are rusty and greasy.In the raw product product area the racks used to store tubs of primal cuts of meat, have fat blood and meat particles sticking to it. A lot of the item's in this Nr are not food contact area's but have the potential for causing contamination to caresses and finished product and need to be kept clean and in good repair.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
