Citation: After Arriving at the plant. I told kevin heebner that i would be performing a Pre-op inspection. I started my inspection in the boning room and found everything to be acceptable. I than went to the kill floor and this is what was found. The inside of the blade guard and motor housing was covered in fat and bone dust from the previous days slaughter. As i was completing my inspection, Gerald Jones( plant owner) entered the kill floor. I showed gerald my findings and he cleaned and sanitized the saw in my presences. I than went to the plant office and checked the plants record's and everything was found and marked as acceptable. I than informed the plant that i was going to document my finding's in a NR.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP’s and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOP’s as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOP’s shall authenticate these records with his or her initials and the date.
