Citation: On Thursday, January 20th at approximately 0800 hours during a plant walk-through, the following deficiencies were noted: In the employee break area, all of the wooden shelves are dirty, (grease, crumbs, etc.) in need of an extensive cleaning and need to be made more readily cleanable. From the removal of the old stove pipes, there is now exposed fiberglass insulation filling in the holes in the wall where the pipes exited the building. From the old furnace that was removed, there is now a long piece of unused two-inch pipe that is extremely rusty and needs to be removed. The expansion tank on top of the hot water tank is very dusty as are the associated pipes and shut off valves along the wall (green oxidation and dust). The carcass cooler had a pole that is used to hang hooks/change rails that was extremely dirty and covered from top to bottom with residue. In the knocking pen area, both sliding doors have openings around them and are not sealed properly which would allow easy access for rodents. In the inedibles room many of the empty barrels that stomach contents are emptied into are still very dirty and need to be better and more frequently cleaned after the contents are emptied. The floor in the SRM room was dirty. Upon exiting the boning room into the shipping and receiving area, immediately above the small doorway, there is an exposed opening above the doorway that has a large amount of cobwebs that need cleaned and the opening needs to be closed. Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

416.3(c) Receptacles used for storing inedible material must be of such material and construction that their use will not result in the adulteration of any edible product or in the creation of insanitary conditions. Such receptacles must not be used for storing any edible product and must bear conspicuous and distinctive marking to identify permitted uses.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
