Citation: Basis several plant walk throughs, the following non-compliances have been observed: On the cooler door that leads to the carcass cooler from the carcass wash area there are two rusty metal strips that run down on the outside of the door. As carcasses are pushed around at the final wash, they are at times pushed against the cooler door and come in contact with these metal strips. The ceiling in the main carcass cooler as well as the boxed-in metal beams over the rails need cleaned. There is also a very rusted support pipe that descends from the ceiling to the rail in the cooler. One of the overhead lights in the carcass cooler, as well as a light in the back finished product cooler are burned out. Also, the overhead light directly above the head inspection station is not functioning properly. There is also build-up inside the kill floor light covers. In the kill floor area, there is are cracks in the block above and around the knocking pen door that raises to allow for stunned cattle to enter the kill floor. In the final wash room, there is a corner strip located at the left of the cooler door that has separated from where the two walls adjoin. There are two very rusted light switch/electric socket face plates, both of which are located leading into the boning room. One is located in the plant office and the other at the kill floor side that leads into the boning room. On the outside, leaves and trash have collected around the perimeter of the building which could lead to the harborage of vermin. Also, at the outside corner of the building near the main road and the side holding pen, there is a large piece of the buildings foundation block that is gone and needs sealed so as not to permit the entry of vermin into the establishment. 416.2(a)

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
