Citation: On Wednesday, October 20th at 0830 hours, the following non-compliance was observed: Prior to myself leaving the establishment to attend a meeting at another establishment, I looked into the cut-up room where employees were de-boning beef carcasses. At this time, I observed a plant employee dropping an approximately one to two pound piece of boneless beef onto the floor. The employee picked up the meat and threw it across the room onto the cut-up table without any attempt to recondition or clean it in any way. After having done this, the employee noticed that I had just observed what he did and he removed the piece of meat from the table and discarded it. No U.S. Reject tag was issued to the cut-up table, as I had the employee scrub and re-wash the affected table top to an acceptable condition in my presence. Plant owner Gerald Jones was not at the establishment at the time. I notified Plant Manager [redacted] of the non-compliance. 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
416.5(a) Cleanliness. All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.
