Citation: While performing a 01B02 at the establishment on 9/28 the following was observed on the kill floor. The large splitting saw had small particles' of fat on the saw housing and between the saw guides and the blade. there were to many to count. on the small brisket saw there were small pieces of fat and bone dust on the housing ,also the employees break room there are chips, dirt. paper on the floor. on a shelf along the wall there is a griddle that the plant cooks food for the employees that has grease all over it from the last use Past Similar NRs - Previous Ineffective Plant Actions: not cleaning acording to the ssop NR: 8-2010 dated 7/27/2010

Regulation:

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
