Citation: At approx 0745 after the plant had completed their equipment checks. I found that the bologna stuffer had dried batter inside the connection ring where the stuffing horn is connected to. This area is in a food contact area. I showed the plant employee the area of concern. He immediately recleaned this area for acceptable use. 416.4(a) States that: All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
