Citation: At approx 0610 after the plant had completed their equipment checks. I found that the carcass splitting saw had a black substance on the inside door and blade wheel. This area was approx 2"x4"and located in a food contact zone. I showed this area of concern to Mr. [redacted] He immediately recleaned the carcass saw to an acceptable condition. 416.4(a)States that: All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
