Citation: After being notified by plant management that I could start my pre-op inspection. I noticed that the grinder had some fat smears at the base where the worm sits, This area is in a product contact area, The area of the fat smear was approx. 6"x6". Mr. [redacted] who was in the area immediately recleaned the grinder for acceptable use. 416.4(a) States that: All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
