Citation: At approximate 0600 hrs, after management inspection, I observed the following, while performing a Pre Operational Inspection procedure:
1-In the packing room next to the main processing room, the cutting board located by the left, has approximately 65 % of its surface scarred with deposits of brownish unknown substances on the scars .Cutting board was rejected with US reject tag NoB36279437.
2. In the Main Processing Room, the Grinder/Blender, Butcher Boy, has unknown orange substance in the auger; management immediately initiated corrective actions ,when informed.
3. In the main Processing room, the band saw machine has product residues on the lower housing walls, meat scrapper /cleaning unit ,and the blade has rust on its surface .The saw machine was rejected with US reject tag No B27515148.
Mr ,Production Supervisor was informed of failure to comply with 9 CFR 416.1,416.4(a) and 416.13(c)

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
