Citation: At 0700 Hr. while observing conditions in the pump/netting room. I noted that a SS work table had netting and hooks from the previous days production on it (noproduction in the room today). The table had meat emulsion/particles on it. The Tipper Tie on this table had meat and surface rust on it. A knife and mesh glove had meat emulsion/particles on them. A dirty white towel was laying on the table. Paper/marker were laying on this table also. I checked the SSOP pre-operational sanitation form and the non-compliance was not documented. I notified [redacted] Production Supervisor and [redacted] Plant Manager of this non-compliance. I applied US Reject Tag No. B30 413730 to the table and equipment. This is a violation of 9 CFR 416.13(c), 416.4(a), and 416.4(b).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
