Citation: At 0605 Hr. while conducting the 01B02 procedure I observed 4 gray lugs on the floor in the raw processing room near the stuffer. I also observed in the packaging room 2 scales with meat particles on the scale tops. I immediately notified [redacted] Production Supervisor and he took immediate corrective actions. The lugs were removed from production and taken to the cleaning area for cleaning. The scales were recleaned and acceptable for use by 0615 Hr. This is a violation of 9 CFR 416.13(c) and 416.4(a).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
