Citation: The HACCP Plan for Raw, By identifying the potential growth of Salmonella, the plant recognizes the potential presence of Salmonella, however, the plant does not identify this hazard nor does it have any supporting documentation to demonstrate that pathogen presence is not a hazard likely to occur. Mr. was verbally notified of the non-compliance. This is a violation of 9 CFR 417.5(a)(1).
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
