Violation: 416.2(d), 416.4(b), 416.4(d)

Citation: At approximately 0845 hours; while performing scheduled procedure 01C02, I found noncompliance with the regulations pertaining to sanitation performance standards. The following deficiencies are what was observed: In cooler #3- I observed heavily beaded condensation inside the cooler, at two locations. Both locations were on the ceilings and rails, 1 near the exit door to the processing room and the other near the exit door leading to the raw area. No product was below the condensation at this time; however product passes through both areas constantly through out the production day and many of these products are uncovered. In Cooler #1; I found an accumulation and buildup of dust/debris on two vent covers. The covers are located on the underside of the air cooling unit and the build up covered both of these covers. This finding was directly above uncovered slabs of bacon. I then checked the product to make sure the product was safe from any cross contamination. No dust/ debris appeared to have come into contact with the product below it; therefore a regulatory control action was not necessary. I immediately notified Floor Supervisor-[redacted] of this noncompliance and showed him all findings. He began taking corrective actions immediately.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
