Citation: At approximately 0835 hrs. while performing unscheduled task 01C02 in the raw area department I observed the following deficiencies !) The band saw which had not been used yet today had a brownish residue film on the plates where the product rest. 2) The hanging fan at the sink has excessive amount of dust and dirt built up on the fan and the cover. Supervisor [redacted] was immediately notified. Upon review of plants pre-operational sanitation record for today I observed that the band saw was found acceptable. The band saw was immediately cleaned and sanitized before use.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a)

All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
