Citation: At approximately 0825 hours while performing PBIS code 04B04, I observed the plant employee's packing and labeling sausage grillers: (13 cases in all; 4 Apple Maple; 3 Original flavor; 4 Sweet Italian; 1 Hot Italian; 1 Fresh Sausage grillers with Cheddar Cheese). They put the name of the product on the front of the package (each contained 4 sausage grillers) but they did not put the safe handling Instructions on the individual package. I immediately discussed the noncompliance with Mr. [redacted] Mr. [redacted] said the product was going to the retail store, but the labels on the individual packages and the cases that held the product had the Inspection legend for the plant. I put U.S. Retain tag on the product, with number B30 658407. At approximately 1030 hours Mr. [redacted] had the employee's open the cases and put the safe handling instructions on the individual packages of sausage grillers and the U. S. Retain tag was removed and product was released. The establishment is not meeting 9 CFR 317.2(l)
317.2(l) Safe handling instructions shall be provided for: All meat and meat products of cattle, swine, sheep, goat, horse, other equine that do not meet the requirements contained in § 318.17, or that have not undergone other processing that would render them readyto- eat; and all comminuted meat patties not heat processed in a manner that conforms to the time and temperature combinations in the Table for Permitted Heat-Processing Temperature/ Time Combinations For Fully- Cooked Patties in § 318.23, except as exempted under paragraph (l)(4) of this section.
