Citation: While performing Pre-Operational Sanitation inspection on Friday June 15, 2012 at approximately 0645 hours I observed the following noncompliances on the slaughter floor. Fat Residue build up on the water spray nozzle on the carcass split saw. Several clusters of particles approximately 3/8 of an inch size for each cluster. The metal hanger for the carcass split saw with a build up of fat and meat residue from the previous days production. This residue was approximately an eighth of an inch thick and covered an area approximately 2 inches by 6 inches. I also observed the under side of the viscera cart an area of blood and fecal matter build up that was approximately 1/4 of an inch thick in spots covering an area approximately 15 inches square near the front of this cart underneath. Mr. [redacted] was shown these noncompliances. No regulatory control action was taken due to the plant taking immediate action to correct these noncompliances.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
