Citation: While preforming SPS verification Task in the inedible room off from the Kill Floor I noticed the room was in dissaray. There were several paper towels laying on the catwalk to the knocking box and on a stainless steel barrel that had not been clean from the previous days production. Also on the catwalk was employee equipment (Steels, captive bolt stunner) that had not been cleaned from previous days production. All the walls in the room had areas of blood and trimmings equaling one square inch or greater along with contamination between two feet by six inches on the bottom half of the framing for the knock box window were observed along with two dirty fuel cans and a wheelbarrel which still contained sawdust and dirt from the pens.

§ 416.2 Establishment grounds and facilities (b)(2) Walls,floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
§ 416.4 Sanitary operations. (b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
