Citation: On 3/19/2012 while performing operational sanitation procedure i observed the following noncompliances .

1.Box storage area is in an insanitary condition , dusty , dirty , mold and the roof is leaking as evident if water damage to unused boxes

2. smoking racks and bacon hooks were not cleaned after last used .

3.shelf and equipment on shelf above smoke racks dusty dirty ,

4 . spice room has evident of infiltration of birds , nesting material , hole in wall , also dusty , dirty .

There was no indication that these noncompliances were observed by the establishment , SSOP , inplant tags etc.

Failure to control and or eliminate these types of noncompliances could result in further regulatory and or administrative control measures .

Regulatory control actions were taken on box room using US reject tag #B38685269 and smoke racks /shelf using US reject tag #B38685217.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
