Violation: 416.13(a), 416.13(c)

Citation: On 2/15/2012 ,Dr. , performed pre-operational sanitation procedure in the further processed products room and found the following noncompliances;

1. Hot dog peeler had a greasey fatty film in the tunnel and in the knife cover. The outside covers of the peeler also had specks of fatty residue.

2. The auto slicer had several pieces of meat and fat particles on the product contact surfaces.

A regulatory control action was taken on both pieces of equipment using USDA retained tags #B37057669(auto slicer) and B38869296(hot dog peeler).

These are deviations from plants HACCP plan and noncompliance's with meat and poultry regulations 9CFR416.13(a) and (c).

Failure to control and or eliminate these types of noncompliance's could result in further regulatory and or administrative control measures.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.
