Citation: On 11/15/2010 at approximately 1245 while waking through the Establishment with Dr. [redacted] and Dr. [redacted] we found the following deficiencies. Retail Cooler: All of the shelving units were rusty and there were meat particles in some areas, the fan covers on the back refrigeration unit have a buildup of dust, Retail product on the shelves were uncovered. Smoke Cooler: The rail system has a buildup of grease at the switch junction and they are rusty, there was condensation on the walls and rails. Production Cooler: The green flaps outside the back door has dust up on the top, by the small shelf unit to the left and in the corner there is dirt on the floor. Break Room: There is dirt on the floor edge of the threshold. Production Hallway: The sink is rusty in several areas. Slaughter Cooler: The walls and door are spattered with an unknown substance, the refrigeration unit and the wall was covered with condensation. [redacted] was informed of these noncompliances. These noncompliances do not meet the regulatory requirements of: 9 CFR 416.1 General rules. Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 9 CFR 416.2 (b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions. 9 CFR 416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
