Citation: On 08/25/2011 at approximately 0630 hrs while conducting ISP Procedure 01B01, pre-operational sanitation, at establishment 09784, I noted the following deficiencies. 1) The blade of the Wel-Saw in the big cooler had a dried film on the end of the blade tip from the previous day's production. 2) The cutting board in the smoke cooler had pieces of ground product on its surface from the previous days production. 3) The bacon slicer had numerous fat-like particles distributed on its surfaces. 4) The table next to the bacon slicer had dried blood spots on its surface from the previous day's production. 5) The table holding the meat cuber had dried tissue particles and what appeared to be a blood clot on its surface from the previous day's production. Mr. [redacted] was notified of the deficiencies. These deficiencies are a violation of 9CFR 416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product and 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. All surfaces were cleaned and sanitized immediately and released for production. Failure to comply with regulatory requirements could result in additional regulatory or administrative action.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
