Citation: On 6/16/2011 while performing PBIS Task Code 03J02, I saw the Establishments Slaughter Antimicrobial Application Record (Plant Form 003B) wasn't filled out properly. The employees had not filled all the information in the proper spots or written the species on some of the entrees. The antimicrobial application was applied as it is seen for each carcass by IPP doing the inspection process. " 417.5 Records. (a) The establishment shall maintain the following records documenting the establishment's HACCP plan: (3) Records documenting the monitoring of CCP's and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment's HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
417.5(a)(3) The written HACCP plan shall identify the corrective action to be followed in response to a deviation from a critical limit.
