Citation: On 4/19/2011 at approximately 0645 hours while performing pre-operational sanitation, I noticed in the throat of the coarse grinder a piece of fat approximately 1.25 x 2.5 centimeters. Also the sharpening stone attachment of slicer in the processing area had several pieces of fat and meat particles from previous day's production (approximately .75centermeters to 1.25 centimeters in size). Plant took immdiate corrective action by cleaning and sanitizing equipment, therefore no regulatory control action was taken.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
