Citation: On 2/8/2011 at approximately 1310 while performing procedure 06D01 the following noncompliances were observed. In the RTE Cooler the hose holder had black debris on the outside and on the inside opening, the drain pipe had several chunks of meat back in the corner, down the length of the pipe along side the work table, and where the pipe runs behind the patty machine. In the RTE Room the ceiling has smoke residue in several areas, meat particles on the wall behind the stuffer. In the Processing Room meat particles on the wall behind the stuffer. In the Fabrication Room the plastic zip ties on the switches had fat build up in the crevasses. I informed [redacted] of these noncompliances. These noncompliances do not meet the regulatory requirements of: 9CFR 416.4 (b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
