Citation: On 12/29/2010 at approximately 1300 while performing an operational walk through the plant, the following noncompliance was observed. In the Spice Room the coating on the metal rack was bubbling and came off to the touch, there was a box of spices stored underneath. The spices had been opened and tied off with a twist tie, there was an opening at the top. The spices could become adulterated by falling particles. I informed [redacted] of this noncompliance, he immediately turned upside down shook each of the spice bags and placed the box of spices on the top shelf. This noncompliance does not meet the regulatory requirement of 9CFR416.4(d) (d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
