Citation: On 12/28/10 at approximately 0630 hrs while conducting ISP procedure 01B02, preoperational sanitation, the following deficiencies were noted: 1)The band saw in the boning cooler had dried tissue like material dispersed around the wheel on the inside of the upper housing from the previous day's production. U.S. Rejected tag #B38685291 was applied to the band saw. 2)There was tissue like substance around the lower blade guide in the lower housing. 3)The minute steak slicer in the smoke room had dried particles of a tissue like substance scattered on its outside surfaces. There was a 3 cm long piece of dried tissue like material suspended from the upper edge of the tunnel the product passes through just past the blade from the previous day's production. U.S. rejected tag #B38685289 was applied to the minute steak slicer. The band saw was cleaned and sanitized and presented for re-inspection. The tag was removed after passing re-inspection. The rejected tag was left on item #3 until the plant addresses the sanitation issue and presents it for re-inspection. There is no evidence that the plant had identified the insanitary conditions listed above. Mr. [redacted] was notified of the deficiencies. 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary condition and the adulteration of product. 416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
