Citation: On 10/19/2010 at approximately 0800 while performing while performing 01C02 procedure, I observed the following deficiency on the slaughter floor: The water in the sterilizer was not steaming, I then used the slaughter floor thermometer and took the temperature the temperature was only 78 degrees Fahrenheit. The Establishment's GMP states that the kill floor tools, knives, and saws will be sanitized after stick and bleed, opening brisket, midline, dropping bung or when contaminated. A regulatory control action was taken on this noncompliance with retain tag number B38685247, there was no way to sanitize the equipment, the slaughter operation was shut down until the appropriate temperature of [redacted] degrees Fahrenheit was meet. I informed Mr. [redacted] of this noncompliance and that an NR would be issued. This noncompliance does not meet the regulatory requirements of: 9 CFR 416.4 Sanitary operations. (a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product 9 CFR (d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
