Citation: On 9/22/10 reviewed plants SSOP , pre-operational report and observed that they had recorded that the bacon slicer was found to be insanitary and recorded as rejected by the establishment . On 9/23/10 I observed that the plant reject tag was removed from the bacon slicer , I reviewed plants SSOP pre-operational report and observed that the plant had indicated that the bacon slicer had been cleaned and the tag removed . Upon inspection of the bacon slicer I observed meat and fat particles on the belt drive system and a residue buildup on the belt system framework . A regulatory control action was taken using US Reject tag number B38685230. This is a deviation from plants SSOP and a noncompliance with meat and poultry regulations 9CFR416. Failure to control and or eliminate this type of noncompliance could result in further regulatory and or administrative control measures.

Regulation:

416.15(a) Each official establishment shall take appropriate corrective action(s) when either the establishment or FSIS determines that the establishmentís Sanitation SOPís or the procedures specified therein, or the implementation or maintenance of the Sanitation SOPís, may have failed to prevent direct contamination or adulteration of product(s).

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
