Citation: On September 13, 2010 at approximately 0715 hours while performing HACCP procedure 01C02 I observed 7 grey plastic lugs of boneless beef by the grinder in the processing room with varying degrees of off-condition product including greenish yellow slime and grey fuzz/mold on the surface of various pieces in all 7 grey plastic lugs. There was no indication that the plant had knowledge of or had taken any action to control adulterated product. As a regulatory control action two U. S. Reject tags #B38685288 & #A8065652 were applied to these 7 lugs of boneless meat. Mr. [redacted] II was informed of this noncompliance. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. 9 CFR 416.4(d) States in part that product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
