Citation: On 8/31/2010 at approximately 0630 hrs while performing ISP procedure 01B02, preoperational sanitation, the following deficiencies were noted: 1)The blade on the bacon slicer had several small tissue like particles on its inside and outside surface. 2)The wall behind the roll stock had a film of unknown buildup on its surface. 3)The inside of the door of the smoke cooler had a film of unknown buildup on its surface. 4)The table in the smoke cooler had fat and tissue like particles on its stainless food contact surface and a rust like stain on the surface of the cut board. It was rejected with U.S. Rejected tag #B38685297. 5)The [redacted] machine had brown tissue like residue on surface the conveyer chain. It was rejected with U.S. Rejected tag #B38685296. There was no indication that the plant had identified the deficiencies. Mr. [redacted] was notified of the deficiencies. 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. This refers to items 1,4 and 5. 416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. This refers to items 2 and 3. Item 1 was cleaned and sanitized immediately. There was no indication that the plant had identified the deficiencies. Mr. [redacted] was notified of the deficiencies. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
