Citation: On 8/13/10 while performing procedure code 01C02 , preoperational sanitation , I observed that 2 smokers were not cleaned from previous uses . There was a layer of fatty residue on the bottoms and sides . Also in 1 smoker there was a smoke rack that was rejected for use by the plant using a plant reject tag with the date 8/9/10 . Rack was entered on that days sanitation report but not on any subsequent reports mentioning that it was still rejected . A regulatory control action was taken on both smokers using US Reject tag numbers #B38685227 and #B38685228. There was no indication that these noncompliance's were observed by the plant , no entry on plant records or no plant reject tags were in place identifying them as rejected for use. These are deviations from plants SSOP and are noncompliant with meat and poultry regulations 9CFR416.4(a). Failure to control or eliminate these types of noncompliance's could result in further regulatory and or administrative control measures.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
