Citation: On 8/10/10 at approximately 1200 hours , while performing HACCP procedure code 03C02 , Raw , not ground , I observed in the large holding cooler that there was 4 hind quarters and 4 front quarters that were covered with blue/gray mold and had a slime residue on all surfaces . A regulatory control action was taken using U.S. Retained tag number B38685226. There was no indication that the plant took any measures to control adulteration of product help in the cooler for an extended period of time . This is a deviation from plants HACCP plan and a noncompliance with Meat and Poultry regulations . Failure to control these types of noncompliance's could result in further regulatory and or administrative control measures.
