Citation: On 07/16/2010, at 0640, while performing task code 01B02 after the plant pre-operational sanitation the following noncompliance was observed: The Biro meat slicer in the sausage processing area has particles of meat of various sizes on the outside metal housing, on the plastic protective cover on the top under the on/off switch, and on the inside metal housing on the door and behind the cutting blade. A control action was taken with U.S. Reject tag number B38685213. Mr. [redacted] was informed of the noncompliance and that an NR would be issued. Mr. [redacted] informed a plant person the noncompliance and the slicer was cleaned and sanitized. This noncompliance does not meet the requirements of the following regulations: 9 CFR 416.13(c) which states Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. and 9 CFR 416.4(a) which states: All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. A similar NR was issued on 07/09/2010 number 2010031

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
