Citation: On 06/28/2010 at approximately 1440 while performing ISP procedure 01C02, operational sanitation, I found the patty machine stored in the smoke cooler with old dried up ground beef inside and out. I checked the preoperational records and it was identified as in need of cleaning. The SSOP states that [redacted] There was no in-plant rejection tag applied to the patty machine. I asked [redacted] if the patty machine was used today he replied no. I took a regulatory control action with US Reject tag number B685205. On 06/28/2010 at approximately 1440 while performing ISP procedure 01C02, operational sanitation, Dr. [redacted] was inspecting the hot dog peeler and found fat residue on the removable covering of the drum (where the casings end up), and in the back of the casing drum there was a piece of screen with a tear in it and a few casings were trapped behind the screen. The hot dog peeler had not been used that day. The hot dog peeler was identified on the preoperational records as in need of cleaning but, there was no in-plant rejection tag applied to the hot dog peeler. Dr. [redacted] took a regulatory control action with US Reject tag number B685202. I notified [redacted] of these deficiencies. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action. 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
