Citation: On 6/24/2010 at approximately 0805 hrs while performing ISP procedure 01C02, operational sanitation, I noticed that the removable covering of the drum (where the casings end up) on the hot dog peeler had numerous 2-3mm fat-like particles scattered on the inside of the lip. The peeler had not been used that morning. There was no indication that the plant had identified this deficiency. [redacted] was notified and the covering was taken to be washed and sanitized. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
