Citation: While performing a scheduled 03J01 at 10:00 am and at the observation and verification of monitoring procedures for the CCP-2B for Slaughter HACCP plan I noticed the following noncompliance that generates this NR. The monitoring procedures for [redacted] was not been performed as described in the HACCP plan. The CCP-2B hot water intervention used for cattle #4 just reach [redacted] F instead of [redacted] as stated in the Slaughter HACCP plan. Management was notified immediately about the noncompliance with the CCP-2B Hot water intervention for Cattle. Immediately the carcass affected was separated from other previous carcass that properly receive the intervention of hot water at the [redacted] F Critical Limit temperature. The establishment replace the element for the Hot Water but it still did not reach the temperature, of [redacted] so they change a different hot water line which reach the temperature of [redacted] All carcass not previously treated for CCP-2B Hot water intervention were then treated as stated in the HACCP plan. This is a noncompliance to regulation 417.2(c)4 "List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits." You are hereby advised of your right to appeal this decision. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action. No similar NRs were found in the last 60 days.
