Citation: On Thursday, April 26, 2012, at
approximately 0710 hours, I performed the review and observation
component of the Pre-operational SSOP procedure. During the
review, I observed multiple pieces of dried meat and fat on the hand
slicer in the processing room. Particles observed ranged in
size from 1/8" to 1/2" in diameter and were too numerous to
count. In addition, there was a greasy fat residue,
approximately 5" long and 1" wide on the blade guard of the hand
slicer. These conditions were observed after the establishment
had conducted its pre-operational inspection and prior to the start
of operations.
The conditions observed and
described above have resulted in noncompliance with the regulatory
requirements of 9 CFR 416.4(a) and 416.13(c). I immediately
notified Mr. [redacted] the establishment employee responsible for
the pre-op inspection, of the noncompliance. I further
notified Mr. [redacted] of the noncompliance at approximately
0740.
Mr. [redacted] took immediate corrective
actions, which included cleaning, sanitizing, and re-inspecting the
hand slicer. Upon reinspection, I found the equipment to be
acceptable.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
