Citation: On January 4th 2012 at approximately 0930 hrs, I noted the following noncompliance’s.[newline]In the smokehouse room, there was sunlight entering from the sides and the top of the doors going to the outside environmental, creating a potential entrance for vermin.[newline]On the door leading to the air compressor room, the screen taped to the frame was coming off on several locations. Also, in the air compressor room, several holes through which pipes go into the plant through the wall were not sealed. The air compressor room is not sealed off from the outside environment.[newline]The bottom metal plate in the entrance way from the processing room to the carcass cooler was broken. Also, there were two large cracks in the carcass cooler floor.[newline]In the kill floor, there was severe flaking paint on the ceiling. Pieces of flakes were located around the area where the hooks and wheels are stored. Several rail wheels were rusty and had product residue. The pipe covering the chain to the carcass saw was dirty on the side facing the back wall. The bottom of the animal entrance door was bent on one side, allowing a direct connection to the animal holding room, which is not sealed to the outside environment.[newline]On the outside of the building, on the left side wall, two ˝-1 inch holes were found in the wall by an air compressor. On the right side wall, a 1-2 inch hole was found at the wall-ground junction at the location of the rain spout.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
