Citation: At approximately 06:00 AM, on December 09, 2010, while performing scheduled PBIS procedure code 01B02, the following noncompliance was observed. On the kill floor , the overhead rail system had two long hooks next to the splitting saw that was found to have small pieces of dried meat/fat residue from previous days' use. [redacted] was verbally notified on the above noncompliance. He recleaned the hooks and represented them for inspection, and they were acceptable and released. No regulatory control was taken due the fact the long hooks was immediately removed for cleaning. I reviewed the SSOP corrective action logs and found no documentation on the above deficiencies. This is a violation of part 416.13(c), "Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's." I reviewed the NR file and found no recent noncompliance reports of this nature.
