Violation: 416.1, 416.2(b)(1), 416.2(d)

Citation: At approximately 1100 hours while performing an unscheduled sanitation performance procedure the following noncompliance was observed. In the hallway leading to the slaughter area the door into the slaughter floor has rust appearing on the inner and outer lower section of the door. In the RTE cooler there is condensation on the ceiling behind the condenser. No product was beneath the area at the time. These are violations of the afore mention regulations. A review of available plant records show no action concerning these deviations. A review of the noncompliance record show no recent noncompliance of this nature. Lou Sredy(owner) was informed verbally and in writing with this document of the need for corrective action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
