Citation: After the plants pre-operational sanitation inspection and prior to the start of operations, the following non-compliance was observed in the cutting room this morning: The hog cutting circular saw suspended over the cutting table had product residues (fat) on the bottom of the casing covering an area about 3 inches square. Grease/fat smears were observed on the bottom edges of the blade guard (product contact), and the handle. Black ufm residues were observed around the bolts and other edges of the casing. I notified [redacted] that the unit was rejected at 6:15 am. Corrective actions were taken in my presence and the unit was reinspected and released at 6:30 am. The plants SSOP log was not yet available but I was verbally notified by Frank that the area was ready for production prior to my inspection. The requirements of parts 416.13(c) and 416.4(a) of 9 CFR were not met. A similar occurrence was documented as noted below. Past Similar NRs - Previous Ineffective Plant Actions: No written response received at this time. NR: 8-2010 dated 7/27/2010 Failure to initiate effective corrective actions could result in additional administrative and/or regulatory actions. You are advised of your right to appeal this decision as delineated by 306.5 and/or 381.35 of 9 CFR.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
