Citation: At approximately 08:30 on October 7, 2010, while performing a review of the records for the Chilling CCP for fully-cooked, not shelf-stable products, the following noncompliance was observed. Lot# 1005-2, dated 10-06-10, has no documentation for chilling for Kolbassi and snack sticks after [redacted] degrees. I questioned the employee who performs the monitoring procedures, and temperatures were taken but were not documented. This is a violation of part 417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry. I reviewed the NR file and found recent noncompliance of this nature.
