Citation: While conducting a 01C02 operational sanitation walk thru of the establishment, the following 06D01 non-compliance were observed. The non-compliances were not involving food contact surfaces, but do create an insanitary condition on the slaughter floor. 1. The storage room on the south east corner of slaughter floor, where the hooks for the carcasses are kept, had an accumulation of plastic bags, old drinks containers, and paper towel on the floor from previous days production. 2. The sink on the south east corner of the slaughter floor had debris of rust and animal hair particles from the previous day's production. I informed the cleaning personnel of the non-compliance. They immediately removed the items from the area. Next the area was cleaned and sanitized before operation resumed. REGULATION(S) STATES: 9 CFR 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 9CFR 416.4 (b) Non-food surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. This document serves as written notification that you're failure to comply with regulatory requirement(s) could result in additional regulatory or admininistrative action. You are hereby advised of you're rights to appeal this decision as delineated by 306.5 and/or 381.35 of 9CFR.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
