Citation: During an FSIS pre-operational inspection at approximately 0615 hours, the following conditions were observed; 1. In the receiving/kill room adjacent to the employee locker area entrance, observed an inedible garbage receptacle used by establishment employees; filled with previous the days garbage. 2. Holding coolers containing stored finished product; located adjacent to the employee locker room area and the evisceration processing room were observed unclean: Both storage cooler walls contain product fat and residue. Observed bagged inspected Poultry finished product on black floor mats in the storage cooler adjacent to the employee looker room. Further inspection revealed an encrustment of dirt and black residue on and around each black floor mat. Observed product fat and residue on the inside surface of both storage cooler doors. Further inspection revealed the outside of each cooler door unclean. Both storage coolers rejected and tags # B39907633 and B39907632 applied. Sanitation Manager Mr. immediately shown all non-compliances observed and informed regulatory action will remain in effect until corrective action has been performed. Mr. was also informed of failure to meet 9CFR416.1; 416.4(b); 416.4(d)

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
