Citation: April 27, 2011 08:05 hours While performing an unscheduled 01C02, operational sanitation inspection procedure in the kashering department, I observed the following: 1) Smears of brown, pasty machine grease affecting approximately four (4) square inches of the top surface of the stainless steel table between the oscillating, drip line conveyor belt downstream of the soaker and the double decked conveyor belts. I rejected the table, a direct food contact surface, by applying the Food Safety and Inspection Service (FSIS) Form 6502-1 #B39718883. 2) Stains of spattered, grey grease and product residue affecting areas of salting conveyor belts numbers one (1) and five (5), both direct food contact surfaces. I rejected the two conveyor belts by applying the FSIS Forms 6502-1 #B39718885 and #B39718887, respectively. This is a failure to comply with the United States Code of Federal Regulations, Title 9, Chapter III, Animals and Animal Products, Sections 416.4(a) and 416.13(c). The slaughter department's junior manager, [redacted] was promptly notified of the noncompliances verbally. Product was present in the department at the time of the discovery of insanitary conditions, but only in the soaker, and was not observed to have been affected. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
