Citation: November 28, 2010 07:45 hours While performing an operational sanitation inspection procedure in the evisceration department, I encountered a preponderance of black mold on the wall between the entrances of the processing room and the hallway between the tray pack and small salting rooms. The mold peppered the surface of the white, [redacted] paneling, a non-food contact surface, from the concrete skirting to a height of approximately eight (8) feet. I rejected the wall by applying the Food Safety and Inspection Service's Form 6502-1 #B39718914. No product was observed to be affected by the presence of these insanitary conditions at this time. This is a failure to comply with the United States Code of Federal Regulations, Title 9, Chapter III, Section 416.4(b). The evisceration department's junior manager, Mr. [redacted] promptly was informed of the noncompliance verbally. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
