Citation: August 15, 2010 10:38 hours While performing a preoperational inspection of the tray packaging room, Food Safety and Inspection Service (FSIS) Inspector-In-Charge, [redacted] observed the plastic curtains hanging at its entrance soiled with paint chips, blood, feathers, dust, and small pieces of poultry muscle. Inspector [redacted] retained rejected the surfaces by attaching FSIS Form 6502-1 #B39133025. This is not compliant with the United States Code of Federal Regulations, Title 9, Chapter III, Section 416.4(b). Processing co-manager, Mr. [redacted] was immediately verbally informed of the noncompliance. Non-food contact surfaces are required to be cleaned and sanitized with sufficient frequency so as to prevent the adulteration of product and/or the creation of insanitary conditions. Entrance curtains provide great potential for cross-contamination. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).


416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
