Citation: At approximately 0715 hours on 9/5/2011, CSI [redacted] observed an establishment employee pick up in-edible materials off the production floor and without sanitizing her hands, begin to handle edible product on the line. US retain tag B38033104 was applied to the affected product. This non-compliance was shown to floor supervisor, [newline][newline]The establishment's SSOP p. 7 under employee hygiene practice states: " [redacted] ." [newline][newline]Past similar NR# DQH3806090606N dated 8/30/2011. Plant's ineffective further planned action for hand washing was not written. Regulation:

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOPís at the frequencies specified.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

416.5(a) Cleanliness. All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.
