Citation: At approximately 0700 hours while performing the review and observation of a non schedule Pre-Op SSOP Review and Observation task prior to start of Operation after Management finished performing their Pre-Op.according to establishment written SSOP procedure,FSIS inspector observed the following non-compliance:In the Evisceration room,numerous fat and meats sraps varying from 1/8" to1/2" on the direct food contact surface of the stainless steel conveyor belt in the Evisceration Room.In the wash room inside a Holding tank a dirty empty light brown color box spattered with bloodstains and fat particles Numerous feathers ,fat particles /scraps on the outside of the Holding tank.Plant Production Supervisor,Mr. verbally and in writing informed of the non-complianceEvisceration stainless steel conveyor belt washed and sanitized prior to start of operation.Holding tank rejected with US.Rejected tag#B38785536.This is a failure to meet 9CFR416.1,9CFR416.4(a),9CFR$416.4(b),9CFR416.13(c).This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and or administrative action(s).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
